Bikini Recipe
Yields 10 people
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Put all the items into a pot, heat until it reaches a light boil, stirring so the sugar melts. Next, take off the stove and let it to cool completely. Transfer into a clean bottle, cap it keeping it chilled, it will last for about a month.
Preparing the Premix: Pour the specified liquids into a sizeable container, leave to sit for an hour, then filter it preferably using muslin, to ensure it's completely strained.
To serve: Pour 85ml from the cocktail base into a stirring glass containing ice, gently stirring carefully for a minute until cold. Pour into a cold coupe glass or equivalent, top with a few cranberries adding the final touch by giving it a quick spritz of mandarin oil over the top.
